Most likely IT has restricted MFA to MS Authenticator. I don’t know if there is a workaround or if you should use it if there was. But I can totally understand you. Having no choice sucks.
I heard about it. However, I find the need to reinstall all apps via Obtainium quite painstaking and thus haven’t done so yet. It doesn’t provide auto updates either.
I’m using FOSS app Element for Android.
IMO it isn’t so much about knowing who you are, but where you are, what you do, what you like etc. From that they (e.g. G👀gle) will extrapolate a profile and do whatever they want with it - faked data or not.
Furthermore Fitbit belongs to Google. I wouldn’t use a Google product if I was concerned about privacy.
Unfortunately it looks like like your device isn’t officially supported.
To install a degoogled Android aka custom ROM is way more efficient than to degoogle native Android aka Stock ROM.

I tend to switch mobile OSs frequently because of my curiosity for custom ROMs. Overall I mainly use FOSS Browser or iodé Browser (a fork of FF by iodé OS) and Tor on my mobile.
On my work notebook it is FF with AdBlocker (and Snowflake), rarely Edge, and Tor.
On my private notebook, which I use the least, it is FF with NoScript, Privacy Badger, and AdBlocker and Tor.
Vaultwarden for work, KeePass and KeePassDroid for private use.
Not free, but (finally) open source: Threema Libre
Unfortunately I can’t use the app for my public transport ticket because it doesn’t support .pkpass files.
